What alligator tastes like

Not what people expect. Alligator is mild, faintly sweet, and closer to a firm chicken thigh than to any red meat. There's none of the strong flavor people brace for when they hear "wild game." That's exactly why the mild version is the right introduction — nothing is covering anything up.

Who it's for

Anyone trying gator for the first time. No heat to hide behind, so you actually taste what you came for.

People who find most jerky too salty or too spiced. This is the restrained one.

Kids and cautious eaters. The novelty lands, the flavor doesn't scare anyone off.

Why it's blended

Like every exotic meat we carry, this is blended with beef and pork. There's a regulatory reason as well as a practical one — alligator isn't covered by mandatory USDA inspection the way beef and pork are, so blending is what brings the whole product under the federal stamp. It also fixes a real problem: straight alligator is extremely lean and makes a dry, tough jerky. The blend is what makes it good and what makes it inspected.

How it's made
