What alligator jerky actually tastes like

Most people expect something strange. It isn't. Alligator is mild, slightly sweet, and closer to a firm chicken thigh than anything you'd call gamey — which is why it's the flavor people dare their friends to try and then quietly order again.

It's also one of the leanest proteins we carry. Farm-raised alligator from the USA runs high in protein and low in fat, and because the flavor is mild, it takes on seasoning better than most red meat. That's why our Cajun and BBQ versions hit harder than the same seasonings would on beef.

Which one to start with. Mild if you want to taste the meat itself. Cajun if you want heat with it — this is the one our retail partners tell us moves fastest off their shelves. BBQ if you're buying for someone who says they don't like wild game, because it's the easiest entry point we make.
