What antelope tastes like

Lighter than you expect. Where elk is deep and earthy and venison carries a slight edge, antelope is clean and faintly sweet, with a finish that doesn't linger. If "gamey" is what's kept you away from wild game, this is the one to try — there's very little of it here.

It's actually pronghorn

American antelope isn't a true antelope. It's pronghorn — a species found nowhere else on earth, and the fastest land animal in North America after the cheetah. It's not closely related to African antelope at all; the name stuck because early settlers thought it looked like one.

Which is part of why you rarely see it sold. Most pronghorn is taken by hunters and processed at home. Commercially available antelope jerky is genuinely uncommon.

People who read labels. High protein, no MSG, and an ingredient list short enough to actually get through.

Hunters who've had pronghorn in the field. Worth comparing against your own — antelope is notoriously easy to ruin in processing, and a proper smoke does it justice.

Why it's blended

Like every exotic meat we carry, this is blended with beef and pork. There's a regulatory reason as well as a practical one — antelope isn't covered by mandatory USDA inspection the way beef and pork are, so blending is what brings the whole product under the federal stamp. It also fixes a real problem: pronghorn is exceptionally lean, and straight antelope makes a dry, tough stick. The blend is what makes it good and what makes it inspected.
